Shanghai-style noodles, also known as ''la mian,'' are a popular type of Chinese noodle dish. Here's a general guide on how to make Shanghai-style noodles:

Ingredients:

  • 300 grams of all-purpose flour
  • 160 milliliters of water
  • Pinch of salt

Instructions:

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while stirring with chopsticks or a fork until the mixture starts to come together.
  2. Knead the dough on a clean surface for about 10 minutes until it becomes smooth and elastic. If the dough feels dry, add a little more water; if it's too sticky, add a bit more flour.
  3. Shape the dough into a ball, cover it with a damp cloth or plastic wrap, and let it rest for about 30 minutes.
  4. After resting, roll out the dough into a large rectangle, about 1-2 millimeters thick, using a rolling pin. Sprinkle some flour on the surface and the dough to prevent sticking.
  5. Fold the rectangle into thirds, like a business letter. Then, cut the folded dough into thin noodles, about 5-6 millimeters wide. Unfold the noodles and separate them gently.
  6. Bring a large pot of water to a boil. Add a teaspoon of oil to prevent sticking. Carefully drop the noodles into the boiling water and cook for about 2-3 minutes or until they become tender. Stir occasionally to prevent them from clumping together.
  7. Once cooked, drain the noodles and rinse them with cold water to stop the cooking process. Set them aside.
