Shanghai-style noodles, also known as ''la mian,'' are a popular type of Chinese noodle dish. Here's a general guide on how to make Shanghai-style noodles:
Ingredients:
- 300 grams of all-purpose flour
- 160 milliliters of water
- Pinch of salt
Instructions:
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while stirring with chopsticks or a fork until the mixture starts to come together.
- Knead the dough on a clean surface for about 10 minutes until it becomes smooth and elastic. If the dough feels dry, add a little more water; if it's too sticky, add a bit more flour.
- Shape the dough into a ball, cover it with a damp cloth or plastic wrap, and let it rest for about 30 minutes.
- After resting, roll out the dough into a large rectangle, about 1-2 millimeters thick, using a rolling pin. Sprinkle some flour on the surface and the dough to prevent sticking.
- Fold the rectangle into thirds, like a business letter. Then, cut the folded dough into thin noodles, about 5-6 millimeters wide. Unfold the noodles and separate them gently.
- Bring a large pot of water to a boil. Add a teaspoon of oil to prevent sticking. Carefully drop the noodles into the boiling water and cook for about 2-3 minutes or until they become tender. Stir occasionally to prevent them from clumping together.
- Once cooked, drain the noodles and rinse them with cold water to stop the cooking process. Set them aside.
